This can be on your table in 30 minutes, making this a perfect week night meal for those busy nights.

Perfect for summer time grilling, or a chilly fall, slow simmered chicken, you can't go wrong with this healthy, spicy chimmichuri recipe. The spice in this recipe is not real hot, but it does have a nice little kick, with an amazing flavor. If your not a fan of heat, feel free to omit the jalapeos completley.

This healthy, spicy chimmichuri chicken uses fresh ingredients like parsley, cilantro, red onion, jalapeno, and garlic for the chimmichuri, and our protein is skinless, bonless chicken breasts. You can also substitute the chicken for flank steak, or another protein if you wish.

I would recommend sourcing local and organic ingredients for the freshiest, most robust flavors, as well as the highest vitamin and mineral count, because why eat it if we aren't getting the most nutritional value from it?

Ingredients

  • Bonless, skinless chicken breast
  • Parsley
  • Cilantro
  • Red Onion
  • Garlic
  • Jalapeno
  • Olive Oil
  • Red Wine Vinegar
  • Lemon Juice (fresh squeeze)
  • Oregano (dried)
  • Salt
  • Pepper

Instructions

  • Season your chicken breast with salt, pepper, garlic powder, sage, and oregano.
  • Heat 2 tbsp of butter, and 2 tbsp of olive oil in a skillet over medium high heat.
  • Add chicken and sear on both sides to form a nice, golden crust.
  • Place a lid on and reduce heat to a medium/low for about 20 minutes or until internal temperature of 165 degrees is achieved. Continually check and flip chicken to be sure it does not burn.
  • Meanwhile, grab your food processor. In the bowl part, add parsley, cilantro, red onion, jalapenos, garlic, olive oil, red wine vinegar, lemon juice, dried oregano, salt and pepper.
  • Pulse for a few minutes until you have a creamy, minced sauce. Set aside.
  • Plate chicken, and drizzle your spicy chimmichuri onto your chicken. Serve and enjoy!

For the Chicken
  • 1 pound Chicken Breast (Boneless, skinless)
  • 1/2 tsp Sage (dried)
  • 1/2 tsp Oregano (dried)
  • 1/2 tsp Garlic Powder
  • 1 tsp Lemon Juice (freshly squeezed)
  • For the Chimmichuri
  • 1 cup Parsley
  • 1/2 cup Cilantro
  • 1 half of a Red Onion
  • 2 small Jalapenos (For less heat, de-seed and de-rib.)
  • 3 Garlic Cloves (peeled and whole)
  • 3/4 cups Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 2 tbsp Lemon Juice
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
Instructions
  1. For the Chicken

    Melt 2 tbsp butter and 2 tbsp olive oil in a skillet over medium high heat. Season chicken with spices in ingredients list.

  2. Add chicken to skillet, searing on both sides until a golden crust has formed. Plae a lid on, and turn heat down to a medium low, simmering for about 20 minutes or unti an internal temperature of 165 degrees is reached.

    The timing will depend on the thickness of your chicken breast. The thicker it is, the longer it will have to cook. You can also fillet (butterfy) chicken breast in half to speed up cooking time.to
  3. For the Chimmichuri Sauce

    Place all chimmichuri ingredients into a food processor and pulse until mixture is minced, fully combined, and a creamy sauce-like consistency is reached.

  4. Plate chicken, and drizzle chimmichuri on top. Serve and enjoy!
