Melt 2 tbsp butter and 2 tbsp olive oil in a skillet over medium high heat. Season chicken with spices in ingredients list.
Add chicken to skillet, searing on both sides until a golden crust has formed. Plae a lid on, and turn heat down to a medium low, simmering for about 20 minutes or unti an internal temperature of 165 degrees is reached.
Place all chimmichuri ingredients into a food processor and pulse until mixture is minced, fully combined, and a creamy sauce-like consistency is reached.
Plate chicken, and drizzle chimmichuri on top. Serve and enjoy!
